Taste & Tell | Decoding Flavor in Appalachian Varietal Honey

Bees that gather nectar from a single floral source produce honey that reflects the flower's character. This quality makes the experience of evaluating varietal honeys highly enjoyable as color, viscosity, aroma, taste and flavor vary from one monofloral honey variety to the next.

Climate, geography and soil aspects also come into play when it comes to how varietal honey of the same flower type is expressed. For instance, orange blossom honey from Spain may taste slightly different than orange blossom honey from Italy, Greece and the United States.

We’ll explore the subtle complexities of monofloral honey harvested by small-scale rural beekeepers of the Appalachian Bee Collective (ABC). Apiaries are situated in Southern West Virginia and Southwestern Virginia, regions distinguished by their rich forests, fields, and diverse plant life.
